Pineapple Tarts




My first attempt at making these vegan tarts. I saw some vegan pineapple tarts sold at a vegetarian shop, but the tarts were really expensive! The craving for the tarts would not go away, so I attempted making my own ..................... tastes better than the store bought ones! :)

Hi,

Here's my recipe:

100g vegan margarine (I used Earth Balance)
125g plain flour + 2tbsp cornflor/arrowroot powder
25g ground almond
1 tbsp organic sugar
1/2tbsp ground flaxseed + 11/2tbsp water

1. Mix margarine with sugar and flaxseed mixture.
2. In a mixing bowl mix together flours and ground almond. Add margarine mixture in and mix to form dough.
3. Roll out and cut shape with cookie cutter.
4. Bake at 180C for about 15mins until edges are brown.


I also tried substituting margarine for about 70g olive oil. Works for me except a bit crumbly. ALso tried making without sugar; taste ok to me :)

For pineapple jam, I use 4 small pineapple (about 1kg in nett fruit). Peel and cut into pieces and blend. Mix with 100-200g organic sugar (depending on taste), one stick cinnamon, 3 cloves and cook in pt until nearly dry. Add 1 tsp apple cider, 1-2 tbsp agave nectar and cook until dry. Mix in 1/4 cup diced almond and stir. Leave to cool and refrigerate if not using immediately.
