Sultana Scones




Ingredients:


150g self raising flour

1 tsp baking powder

1tsp lecithin

25g cold applesauce

40g sultana

60-90ml rice milk


1. Sift flour with baking powder and lecithin.

2. Mix in the applesuce till mixture is crumbly.

3. Mix in sultanas, and stir in enough milk to make a sticky dough.

4. Transfer to lightly floured board and pat softly to a layer of 2cm thick. Cut using cutter and bake in a preheated 200C oven for 10 to 15minutes.

Pumpkin Scones




Pumpkin Scones


Ingredients


250g pumpkin, steamed and mashed

250g self raising flour

50g ground almond

pinch of salt

1 tsp sugar

50g margarine



Method

1) Mix together flour, salt, sugar and almond in a mixing bowl.

2) Rub in margarine till mixture resembles breadcrumbs

3) Stir in pumpkin, and mix together to get a soft dough.

4) Roll out, use cutter to cut out shapes.

5) Bake in preheated oven at 200C for about 15-20 minutes, or till golden brown

Banana Muffins




Ingredients:

Mix together dry ingredients:

100g plain flour

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

50g chopped walnuts
Wet ingredients: Mix together
150ml plain yoghurt
162.5g very ripe bananas, mashed
50g castor sugar
3/4 tsp vanilla essence
Stir the dry and wet ingredients together til just mixed. Bake in preheated oven at 180C for 25 - 30 mins until inserted toothpick comes out clean.
Tastes a bit sweet!

My first attempt at making this local snack. Tastes quite nice and crunchy, but improvement required. Will post the recipe after a few more attempts.

Muffins



Ingredients:


2 cups plain flour

2 tsp baking powder

2 tsp cinnamon powder

1 tsp nutmeg

1/2 cup honey

juice from 3 apples, mix with water to 1 cup

50g applesauce

1 apple, peeled, cored and cubed


1. Sift flour with baking powder, cinnamon and nutmeg powder.

2. Mix in combined wet ingredients (honey, apple juice and applesauce).

3. Fold in apples until just mixed.

4. Bake in preheated oven at 190C for 20 to 30minutes until toothpick inserted comes out clean.
